God of War series actually has so many stages for whatever the occasion is, I could list almost every 30 minutes I played the games.

I like the caverns idea, fighting while those boxes were moving would be pretty cool

Here's another suggestion too:

- How about a map involving Sparta? Spartan soldiers could show up to defend their city, and if enough of them gets killed, maybe Kratos could show up and do some damage to try to turn the tide of the battle.

i have lots of ideas for stages i'll just edit this post or the first from now on

I already stated the awesome Cavern idea before this. It would make for a great CTF map.
