Right now I remember two, "Crystal Ann" by ANNIHILATOR and "Otoño Medieval" from RATA BLANCA, it's just pure music, no singing, but they sure are awesome, for me they are.

Well there's some good acoustic stuff on Opeth's newest album.. If you haven't listened to that you should definitely do so..

Hmmm... Believe In Nothing by Nevermore is a pretty good song... Not completely acoustic but the verse is?

And yet you continue it..... You know, if you're going to point out hypocrisy (a minor case since my intent was valid, to respond to you) you shouldn't do it yourself, fool.

To be on topic, since the Opeth recommendation are all essentially made... I suppose if you go with Viridian, Medicine Wheel and Laser Speed by Between the Buried and Me that can work... Although those tracks are more ambient and atmospheric than purely acoustic. You should enjoy it anyways.
