Make sure you add the Vita plus games to your download list if you haven't already, in case you get a Vita down the road. I would've got a Vita if I could have gotten the Assassin's Creed III bundle for $199, CoD isn't my thing.

I am interested in buying Nights and the Sonic Adventure games while they are on discount. Does anyone know how long these discounts typically last? I really do not want to miss out on them.

Anything that fulls under Plus should appear under the Ending Soon list in the Playstation Plus section of the store. If it's ending the upcoming Tuesday it'll be listed there, if not then it'll usually be there for another week or longer.
