First ask your friend for their PSN ID, then go to the Friends menu, Add a Friend, you will get to a create message screen.
Enter the PSN ID you want to add and send it. Now wait until your friend accepts the request and done!

Correct, you can't just enter a jumble of letters/numbers, you must know exactly how the PSN ID is spelt, then add it then wait for the response.
I'll just add that I got my PS3 back yesterday from Sony after my first Slim got the YLOD, anyway I got it all set up no problem, signd in etc & had 7,8 maybe 9 friend requests, all in the space of around 10 days.
All of them were blank, actually all but one of them said 'saw you on the Forums', but the rest were all blank, I deleted all of the blank ones & accepted the other, what I'm trying to say is don't just send a blank request, tell them why you're sending the request, you saw them here, in a game etc.

To answer your question, there is no way for you to search for/find your friends by an email search, you must have their PSN ID. As it has already been said, you will have to ask them for their PSN ID.
With that said, you can make new friend while playing online or here on the forums. Check out The On and Only Looking For Friends thread
