As soon as we turn on our PS3, it causes our Airport Express to lose its wifi connection immediately. The Airport Express is newly configured with a wireless wifi connection for Airplay in a room that has no ethernet cable.

Buy a new router.
I used to own an Apple Airport Extreme and it was insanely atrocious in network stability, and offers a very unintuitive network configuration to the point its completely exhausting.
Even with the most recent firmware I always get randomly disconnected from the internet...

Yes, it is an Apple router.
However, we're not using it as a router, but only to extend our wireless network for wireless Apple Airplay of the stereo in the bedroom, where we have no Ethernet cable. A new router wouldn't help, as that wouldn't provide Airplay capabilty.
The PS3 is the only thing that's causing the Airport Express to drop its wireless connection.
Disabling the Media Server Connection solved the problem. Prior to this, simply turning on the PS3 caused the Airport Express to drop from the network. As best as I can tell, Media Server Connection was enabled by default, as we haven't been using DLNA.
FYI: our PS3 has a wireless connection to our network.
