Start the Playstation Network account management app on your console, or using the Manage Account link on www.sonyentertainmentnetwork.com.  The e-mail address is part of the Account Information.  You can change it to any e-mail address that is not already being used by another PSN account.  Type carefully,  If you enter the wrong address, you won't be able to sign-in to your account without calling customer support.
