yes that is the style of headset I have...
I still don't see the audio option though
The only sound options I can find in the PS3 menu's is under Settings>Sound settings
Of the 3 audio output settings I can choose, none of them say "headset" - and none of them make sound go through the headset. (even with the R/W jacks unplugged)
I'm really at a loss.... This has to be the most confusing setup I've ever encountered lol
Edit: I also see my thread was moved to an obscure technical sub-forum... Which if experience from other forums has taught me anything means very few people will see it now, so there probably won't be enough feedback/help for me to get the problem fixed Really hoping this isn't the case.

I found a youtube vid on how to hookup Turtle Beach headsets, so I went and bought a $60 Turtle Beach and some adaptors to set it up via the video's instructions.
Works like a charm now, still don't know why the other one wouldn't work no matter what I did.
I'd recommend avoiding Dreamgear products.
